CHILE PEANUT BRITTLE
1 cup unsalted peanuts 1/4 cup flaked coconut 1 tsp. vegetable oil 2 tsp. red chile powder 1 cup sugar 1/2 cup light corn syrup 1 tsp. butter or margarine 1 tsp. baking soda
Combine peanuts, coconut, oil, and chile powder in a glass pie plate. Microwave on High for 2 minutes, stirring after 1 minute. Set aside. Grease a baking sheet. Combine sugar and corn syrup in a 5 quart bowl and and microwave on High for 6 minutes, stir after 3 minutes. Mix in butter and cook 1 minute on High. Immediately stir in baking soda. Add peanut mixture and stir until light and foamy. Pour mixture onto greased baking sheet. Flatten candy with hands or greased rolling pin - be careful it is hot! Let peanut brittle stand until cool and then break into pieces.
